Kakigori is Japanese shaved iced, decorated with flavored syrups, sweeteners, and toppings.

There are countless different variations of this delicious and refreshing treat. Popular fruity summer flavors can be found at any Japanese market, or you can make your own syrups!

Today we’ll be making Ujikintoki Kakigōri- shaved ice topped with matcha green tea syrup and anko (sweet red bean paste).

Ingredients:

  • 1 tsp matcha powder

  • 2 tsp granulated sugar

  • 2 tbsp water

  • anko paste (for a quick and easy approach you can purchase at any Japanese market, or make your own from scratch!)

  • optional- 2 tbsp condensed milk

  • optional- shiratama dango

Directions:

Heat the water and combine with the matcha powder and granulated sugar. Stir to combine until dissolved. Allow the syrup to cool completely before serving.

Assembling:

Using a shaved ice machine, shave a bowls worth of ice (our preferred kakigori bowl is the V Bowl). Top with the cooled matcha syrup and add as much anko paste as your heart desires on top! (we like a lot ☺️).

If you want to make your kakigori extra, add 2 tbsp of condensed milk on top and serve with shiratama dango.
